Prep the potatoes: Wash the potatoes and dry thoroughly. Slice thin slits across each potato, stopping just before the bottom so they stay intact—like a fan. A pair of chopsticks on either side can help prevent slicing all the way through.

Flavor mixture: In a small bowl, mix the melted butter with garlic and chopped herbs.

Season and oil: Brush each potato generously with olive oil, then season with salt and pepper.

Air fry: Place the potatoes into your air fryer basket in a single layer. Air fry at 200°C (400°F) for 20–25 minutes, brushing with the butter-herb mixture halfway through, until the edges are golden and crispy and the insides are soft.
